Couscous (pronounced KOOS-koos) is made from semolina, a coarsely ground durum wheat that is the main ingredient in Italian pasta.

Couscous is a staple of North African cuisine. Most couscous is refined, making it comparable to pasta. This couscous salad by chef Sabra Ricci is perfect on its own or served with grilled chicken or fish.

Sabra says "flavored couscous such as Neareast or Casbah from the health food store works great for this recipe. I particularly like the Casbah Lemon-Spinach Couscous.
