What are Shirataki Noodles?

A reader asks, "What are shirataki noodles? I've heard it's the latest diet food but find it hard to believe that eating noodles could help with weight loss. Isn't it counter-intuitive?"

Although shirataki noodles have been around in Asia for quite some time, they've only recently become popular here with people who are trying to lose weight or are cutting back on carbohydrates. Unlike pasta and other noodles, shirataki noodles contain almost no calories or carbohydrates, and no fat, sugar, protein or gluten.

The main drawback is the taste. Pure shirataki noodles are bland and have a rubbery texture. Some manufacturers add tofu to them which greatly improves the taste, but that adds some calories and carbohydrates. Read my full answer: What are Shirataki Noodles?
